Life is BUSY! Sometimes you just don’t have time to make a well-balanced breakfast in the morning before rushing out of the house. But this recipe shows that that doesn’t have to mean forfeiting nutrition. When talking about super-quick breakfasts which pack you full of energy, this one is an absolute must for your go-to list.

Because you prepare it all the night before (which takes less than 5 minutes by the way), this recipe is really easy and also contains lots of protein as well as long-lasting carbs.

I first found this recipe when I was researching vegan options for breakfasts and was drawn to the fact that the only thing you have to do in the morning is eat it (hooray!)

I was also surprised by the additional health benefits contained in this particular version of overnight oats. Firstly, oats provide a slow release of carbohydrates, which is great for helping you to avoid reaching for a mid-morning snack. The added Chia seeds are also a great source of quality protein and they contain a huge amount of nutrients and not many calories. It’s a win-win!

These overnight oats are also high in antioxidants due to both the matcha and the chia seeds and, of course, the matcha also gives you that wonderful energy boost we have come to know and love.

So next time you have an early start, make this recipe part of your day for a quick breakfast packed with all the nutrients and energy you need.

Switch up the recipe: We used vanilla almond milk in this recipe, but you could replace this with your favourite nut milk. We highly recommend trying coconut milk as an alternative as it works great too. You can also make a lovely cacao version by adding cacao powder to the mix. Try adding spices such as cinnamon, nutmeg and ginger for a winter vibe. Or freshen it us with berries and honey for a more summery feel.
